Peanut Butter Banana Açaí Bowl (The Elvis)

Crunchy elvis crunch-ly Açai Bowls Options

Named after Elvis Presley’s famous peanut butter and banana sandwich, the Elvis Crunch-ly was the bowl for big appetites. Peanut butter goes into the base for richness, and toasted peanuts and granola on top give it the crunch the name promises.

With protein and fat from the peanut butter, this is the bowl that keeps you going until lunch.

Ingredients

For the base

  • 2 packs (200 g) unsweetened frozen açaí purée
  • 1 frozen banana
  • 1 tbsp smooth peanut butter
  • 60 to 80 ml (1/4 to 1/3 cup) milk of your choice

For the toppings

  • 1/2 banana, sliced
  • 1/4 cup granola
  • 1 tbsp toasted peanuts, roughly chopped
  • 1 tsp honey
  • 1 tsp peanut butter, warmed, to drizzle

How to make it

  1. Add the milk, açaí, frozen banana and peanut butter to the blender.
  2. Blend on low with the tamper until smooth and thick.
  3. Spoon into a chilled bowl.
  4. Top with sliced banana, granola and chopped peanuts.
  5. Finish with a drizzle of warm peanut butter and honey.

Tips for a thick bowl

  • Let the frozen açaí packs sit for 2 to 3 minutes, or run them under warm water for 10 seconds, so they break into chunks.
  • Pour the liquid in first and keep it to the minimum. Add more one tablespoon at a time only if the blender stalls.
  • Blend on low and use the tamper (or stop and stir) instead of adding liquid. You want soft-serve, not a smoothie.
  • Chill the bowl in the freezer while you prep the toppings, then eat right away.

Why it works

Peanut butter adds protein and healthy fats, which slow digestion and make this bowl more filling than an all-fruit one. Bananas bring potassium and natural sweetness, so a teaspoon of honey is plenty.

Toasting the peanuts for a few minutes in a dry pan deepens their flavor, so a small amount goes a long way.

Make it your own

  • Nut-free: sunflower seed butter and toasted pumpkin seeds.
  • More protein: add a scoop of vanilla protein powder to the base.
  • Lower sugar: skip the honey; the banana is sweet enough.
