Poke Avocado Toast with Tuna or Salmon

Maui-style poke piled onto smashed avocado toast: a high-protein twist on the classic.

The Poke-cado was where our two best sellers met: a Maui-style poke, dressed simply with soy, sesame and sweet onion, piled on top of avocado toast. It is richer and more filling than a regular avocado toast, and it comes together in about fifteen minutes.

Ingredients

For the poke

  • 150 g (5 oz) sushi-grade tuna or salmon, cut into 1.5 cm cubes
  • 1 tbsp soy sauce or tamari
  • 1 tsp toasted sesame oil
  • 2 tbsp finely chopped sweet onion
  • 1 scallion, thinly sliced
  • 1 tsp toasted sesame seeds
  • 2 tbsp seaweed salad (optional)

For the toast

  • 2 thick slices seeded whole wheat bread
  • 1 ripe avocado
  • 1 tsp lime juice and a pinch of salt

How to make it

  1. Keep the fish in the fridge until the moment you need it. Cut it into even cubes with a sharp knife.
  2. In a cold bowl, toss the fish with the soy sauce, sesame oil, sweet onion and most of the scallion. Leave it for 5 minutes while you make the toast.
  3. Toast the bread until crisp. Mash the avocado with the lime juice and salt and spread it thickly over the toast.
  4. Spoon the poke over the avocado and add a little seaweed salad if you like.
  5. Finish with the rest of the scallion and the sesame seeds, and eat right away.

Buying and handling raw fish

Use fish sold as sushi-grade or labeled safe to eat raw, buy it the day you plan to eat it, and keep it cold the whole time. Raw fish is not recommended during pregnancy or for anyone with a weakened immune system; for them, use cooked salmon, flaked and dressed the same way.

Why it works

Tuna and salmon add lean protein, and salmon brings omega-3 fats too, so with the avocado this toast makes a complete, filling meal rather than a snack.

Dressing the fish only briefly keeps its texture clean. Leave it in soy sauce too long and it starts to cure and turn firm.

Make it your own

  • Cooked option: flaked baked salmon or seared tuna instead of raw fish.
  • Spicy: stir a little sriracha or chili crisp into the poke.
  • Vegetarian: cubed firm tofu, marinated the same way for 15 minutes.
